This year won’t be my first vegan pancake day, but it is the first year I’ve made an effort to make pancakes; I think by this time last year I hadn’t quite got to grips with vegan cooking! This year I’ve partnered with Sambazon to recreate their Açai compote with a vegan pancake recipe.
Since going vegan I’ve made it a priority to focus on working with brands that align with my beliefs and Sambazon definitely tick those boxes. Their acai brand is the only certified organic and fair trade brand in the UK – perfect timing when pancake day happens to fall in Fair-trade Fortnight (until 10th March). Their berries are picked by hand to minimise the environmental impact and ensure that they pay fair wages to their workers. AND there’s no byproduct here – the leftover seeds are even used to power their factories. Tick all those boxes!
If you needed even more of a reason to try them out, açai is often hailed as a superfood. I personally am not a massive fan of that term, because I don’t think its a positive way to define foods – but whatever you want to call them, açai berries are really good for you! They’ve got a great mix of fibre, antioxidants and omega. They’re naturally sugar free (something I’ll admit I didn’t know before this week!) and they also happen to taste great.
So for this pancake day, they asked me to have a go at recreating their açai pancake compote – and of course I’ve paired it with vegan pancakes. The açai compote is so simple to make; you just take a frozen sachet from the pack and run it under warm water for 2 minutes. Once it’s thawed you just pop it in a pan with some fruit (I used blueberries) and heat them together to make the compote. I actually blended mine afterwards to make it super smooth, but you don’t even need to do that! It’s so simple and because they’re individual sachets it limits the amount of mess and washing up (unless you are taking photos for a blog post because my kitchen was a mess afterwards!)
I used this recipe from Olive Magazine to make my vegan pancakes in the end – I did lots of research and sifted through a load of different recipes and these ones had the best overall flavour, while still being fluffy enough to smother in compote! The only difference is that you don’t need to bother fussing with their compote recipe, you can just use an acai sachet in its place!
The best bit is piling the pancakes high with blueberries and bananas and drizzling the compote over the top. I even went a bit off piste halfway through scoffing the ones I made an added a drizzle of vegan chocolate sauce on top, but I am a bit of a sugar addict!
Has anyone tried Sambazon açai before? You can pick up their açai sachets from Ocado and they can be used for super simple smoothie bowls, or, as I’ve done this week, as a delicious pancake topping!
